Apple-Fruited Farina

I know you are wondering “What is farina?”. I was wondering too and found it is what we know as Cream of Wheats. Who would have thought? To give regular Cream of Wheats a little kick try this recipe.

3 cups apple juice
½ teaspoon salt
1/3 cup farina (Cream of Wheats)
½ cup diced dried fruit bits

Bring the apple juice and salt to boiling in a 3-quarts saucepan over high heat.

Gradually add farina, stirring constantly. Reduce heat to low and stir in dried fruit bits. Simmer, stirring occasionally for 2 to 3 minutes until thickened.

This is very tasty and the dried fruit becomes reconstituted and easy to eat. Even if you don’t have dried fruit available this farina has a lot of flavor due to the apple juice. The kids will love it too!
