This is one of my husband’s favorite cookies. They are tasty and relatively healthy for a cookie. Hope you enjoy them!!
2 c. quick-cooking oats
½ c. whole wheat flour
½ c. all-purpose flour
1 tsp. Baking soda
6 tbsp. Margarine
1 ¼ c. firmly packed light brown sugar
1 tsp. Vanilla extract
1 c. dried cranberries
½ c. toasted finely chopped walnuts
Preheat oven to 375 degrees F. Grease baking sheets; set aside.
In medium bowl, combine oats, flours and baking soda; set aside.
In large bowl with electric mixer, beat margarine and brown sugar on medium speed 3 minutes or until creamy. Beat in egg and vanilla until well blended. Gradually mix in oat mixture on low speed just until blended. Stir in dried cranberries and walnuts.
On prepared baking sheets, drop dough by 2 tablespoonfuls, 4 inches apart. Bake 12 minutes or until edges are golden and centers are set. Cool for 2 minutes; remove from sheets and cool completely.
