* NATIONAL CALIFORNIA STRAWBERRY DAY

As part of National Nutrition Month, National California Strawberry Day is observed on March 21st.

Remember as you celebrate, that along with the delicious taste of summer, strawberries are also good sources of potassium, fiber, folic acid and vitamin C. They are also low in calories, with no fat and no cholesterol.

 

What a great day to celebrate – National California Strawberry Day! We bought some strawberries at our Walmart that came from Watsonville, CA. The following recipe for a Strawberry Cooler is simple and very good. I made half a recipe which is 4 servings since it is only me and Mac. Give it a try and enjoy!

Strawberry Cooler (2)

 

1 c. sugar – I use truvia
1 c. lemon juice (5-8 lemons)
2 c. fresh strawberries, sliced
4 c. water

 

 


Combine lemon juice and sugar in a blender. Blend for about 30 seconds.Strawberry Cooler (3)
Add strawberries and puree or pulse. Blend to your desired level of chunkiness.

Pour mixture into a pitcher and add 4 cups of cold water. Mix well and serve chilled.Strawberry ice cubes (1)

 

I also bought this 6 large cube silicon tray wanting to use it for ice cubes.

This is the perfect time to try it. I have chopped strawberries, put a dash of lemon juice and then filled with water up to about 3/4 full.  They’re in the freezer so when I have my cooler with lunch I will have these great ice cubes to place in my glass.Strawberry ice cubes (3)
