Cauliflower Fried Rice

Being on the Ketogenic diet, I used to miss having rice in my stir fry.  I found this recipe that uses cauliflower as the rice substitute.  It works very well as the texture is close to the texture  of rice which means you get a very nice low-carb stir fry.  Give it a try.  I think you will become a fan.


5 c. chopped cauliflower
¾ c. egg whites
3 c. frozen stir-fry veggies
1 c. chopped onion
1 tsp. Chopped garlic
1 Tbsp. Sesame oil
¼ c. fish sauce

Pulse the cauliflower in a blender until it’s reduced to rice-size pieces. Bring an extra-large skillet sprayed with nonstick spray to medium heat. Scramble the egg whites, transfer to a bowl and cover. Wipe and re-spray the skillet, bring to medium-high heat. Add the frozen veggies and ¼ c. water. Cover and cook for 3 min. or until water has mostly evaporated. Add the riced cauliflower, onion, garlic and sesame oil. Cook and stir until the veggies have mostly softened, 5 to 7 min. Add the egg whites and fish sauce. Cook and stir until hot and well mixed, about 2 min.cauliflower-stir-fry-rice-5
